Essential Baking and Finishing Skills

Essential Cakes

Understanding the use of ingredients, basic mixing and baking skills are the foundation of every good cake and a key to get you started.

Learn how to make simple but elegant cakes that can be finished and enjoyed as they are, or used as ideal "base" cakes to assemble, ganache and finish with either fondant RTR icing or buttercream.

What you will learn:

  • Preparing and understanding ingredients and the use of equipment
  • Understanding terminology, general measurements, weight and volume conversions
  • Mixing and creaming techniques
  • How to make, bake, assemble and finish three different types of cakes
  • How to make three different types of fillings
  • Basic piping and icing skills 
  • Simple and elegant finishing designs.

Each student makes and takes home 3 x 7 inch cakes: 

  • 1x Coconut cake with a coconut flavoured buttercream filling
  • 1x Red velvet cake with a cream cheese filling
  • 1x Butterscotch cake with butterscotch frosting and a complimentary butterscotch sauce.

Schedule:

  • Day 1: 6pm to 9.30pm
  • Day 2: 6pm to 9.30pm

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
