This beautifully layered gâteau is a much-loved classic, guided by our teacher you will learn how to create this classic cake, step-by-step and achieve a professional, high quality outcome. 

Vanilla crème brûlée: This classic dessert is a beautiful combination of basic ingredients. The rich custard base flavoured with vanilla bean is irresistible with its crisp burnt sugar crust, a delight when cooked to perfection. 

Passion fruit soufflé: The perfect light and fluffy dessert, when made to perfection, it never fails to impress. This class is designed to provide you with important basic patisserie techniques that will enhance your ability to succeed with any future recipes. 

What you will learn 

  • how to make a traditional, smooth textured vanilla crème brûlée
    • learn the importance of how to prepare the ingredients, considering the correct temperature & aeration
    • learn how to cook the vanilla crème brûlée in a bain-maire to perfection, so that the dish is neither under or overcooked
    • learn how to caramelize the top of the vanilla crème brûlée to achieve a crunchy finish
  • how to make a passion fruit soufflé 
    • learn the importance of how to prepare the ingredients and equipment
    • learn how to prepare ramekins so that soufflés rise evenly
    • learn how to whisk the batter so that the soufflé is perfectly aerated
    • learn how to combine your batters without losing the aeration
    • learn how to bake your soufflé to perfection
  • how to make classic Opera gâteau
    • learn how to make an almond jaconde
    • learn how to make a coffee butter cream
    • learn how to make a chocolate ganache
    • learn how to make a chocolate glaze
    • learn how to glaze professionally and present your pastry items with finesse.

Each student makes and takes home:

  • 1 x Opera gateau
  • 3 x Vanilla crème brûlée
  • 1 x Passion fruit soufflé – students enjoy their soufflés in class. 

All materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
