LEVEL 5:  This class is for students that have completed our level 1 - 4 buttercream piping classes and are now adding the final refinement to their skills by focusing on symmetry and balance when creating this truly stunning and sophisticated two-tier cake.  

In this class you will have the opportunity to really refine your buttercream flower making skills, whilst being introduced to yet another new variety of rose. You will learn how to consider the colour combinations for a two tier cake and also consider the symmetry and balance of the overall design when arranging the flowers. 

All students are hands on and work on their own cake. We have deliberately allowed this class to be a 2 x 8 hour class, providing students with enough time to practice to perfect their flowers as well as get tutor support throughout the day. 

All the techniques and flowers taught in class are interchangeable and you will leave inspired to practice and use your own creativity to take what you have learned even further!  

A detailed step-by-step manual is provided to ensure that students can recreate the designs again and again.   

What you will learn:

  • how to fill and stack a two tiered cake with soft buttercream ( 2 x 6 inch and 1 x 8 inch vanilla cakes)
  • how to fill the gap between the top and the bottom tier 
  • how to stack a two tiered cake securely and get tips on how to transport this cake
  • practice and perfect your masking skills, covering a two tiered cake
  • practice and perfect achieving clean sides and sharp edges 
  • how to achieve natural colour tone using gel colouring
  • how to control your palm pressure to achieve clean edges 
  • how to angle your work in different ways depending on the various piping nozzles, using the concept of a spinning flower nail
  • how to arrange the flowers in the form of a crescent cascading design, focusing on symmetry and balance 
  • this class will cover how to pipe elegant flowers including: 
    • peony in various sizes 
    • onatural roses in various sizes 
    • juliet roses
    • hydrangeas
    • two different types of leaves
    • flower buds 
    • rice flowers 
  • please note that we will not demo the two different types of buttercream used in this class, as these skills are part of the learning outcomes in previous levels.  

All students take home their own cake; all materials are included in the cost of the course. 
 
All equipment and nozzles required in class are provided by the academy. 

Students have the opportunity to purchase cake-decorating equipment including nozzles direct in our online store

Our level 1 to 6 classes are structured in such a way that allows students to learn the skills step-by-step, incorporating many different techniques and flower combinations that will encourage you to use your own creativity and design some magnificent cakes. Each level builds onto the next, creating “edible art” in the process! 

We are introducing a set of new piping techniques and cake designs in our classes that we are sure will impress. Providing the opportunity for students to not only learn the skills in our classes and create beautiful designs but also achieve high quality outcomes. In order to get the best results, we highly recommend that students practise in-between levels. 

We use 100% butter for our buttercream piping and masking recipes. No margarines or artificial fats are used.

Guide to entry requirements:

  • Buttercream piping & creative floral designs level 1– for students that are new to working with piping bags and nozzles and have no experience piping basic flower designs.
  • Creating buttercream flowers, foundation skills level 2– for students that have already some basic piping skills, know how to hold a piping bag properly and are able to us a variety of nozzles. In this class, you will learn the foundation skills of piping buttercream flowers with the use of a flower nail.
  • Assorted buttercream cupcakes, Succulents, level 2-for students that have already some basic piping skills, know how to hold a piping bag properly and are able to us a variety of nozzles. In this class you will learn how to pipe a variety of succulents.
  • Signature rose & chrysanthemum blossom with berries, level 3- for students that already have solid foundation skills piping Korean style buttercream flowers and would like to add new varieties of flowers to their repertoire.
  • Peony and ranunculus blossom design cake, level 4– for students that have completed our level 3 buttercream piping class, or have documented experience piping Korean style buttercream flowers and masking cakes.
  • Crescent cascading 2 tier cake with roses & peony’s, level 5- for students that have completed our level 4 buttercream piping class, or have documented experience piping Korean style buttercream flowers and masking cakes.
  • Wreath design double barrel cake with ombre finish - level 6 – for students that have completed our level 5 buttercream piping class, or have documented experience piping Korean style buttercream flowers and masking cakes.

Entry Requirements
