Kick start your cake decorating love and learn foundation decorating techniques involved in masking, decorating, wrapping and wafer paper designs all from an experience chef and cake decorator. 

Students will learn how to bake 4 different types of cake and 3 different cake making methods all in just two days. You will learn how to make Swiss style buttercream perfect for filling and masking cakes and delicate wafer paper and sugar flowers. 

What you will learn: 

  • preparing and understanding ingredients
  • calculate the batter amount and oven temperature based on batter size 
  • various types of mixing techniques: 
    • all in method 
    • blend method 
    • sugar batter method 
  • How to make a variety of cakes: 
    • mango, coconut and ginger cake 
    • vanilla bean cake 
    • cointreau and orange cake 
    • almond, blueberry and maple cake 
  • how and when to incorporate fruit and alcohol into your mixture 
  • how to make Swiss buttercream for filling and masking 
  • how to fill, stack, level and layer a two-tier cake 
  • how to set up a 2-tier barrel cake 
  • how to correctly position internal supports 
  • how to wrap your cake
  • how to transfer your buttercream design onto your cake 
  • how to work with gum paste
  • how to make sugar flower hydrangeas from start to finish 
  • how to condition the wafer paper 
  • how to create orchids out of wafer paper 
  • how to colour, set up and arrange your sugar flowers and wafer paper flowers 

You will leave this course with your very own two-tiered cake.

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
