This course will be delivered at TAFE NSW - Northern Beaches Campus.

 

In this hands-on evening class learn how to make two innovative filled pastas like a master.

Learn how to make a range of flavoured pastas including tomato & squid Ink Ravioli and egg enriched Scarpinocc.

Complete your experience by complementing your own handmade filled pasta with delicious sauces and fillings. 

What you will learn: 

  • how to make tomato & squid ink ravioli 
  • how to make egg enriched scarpinocc 
  • demonstration in making spinach & ricotta filling  
  • demonstration in making roasted pumpkin filling  
  • how to roll, cut, fill and shape pasta  
  • demonstration in making the tomato broth  
  • how to make burnt sage butter sauce 
  • how to cook pasta  " Al dente "  
  • how to cook vongole  
  • how to present a plated pasta with modern twist
  • understanding the use of garnishes to enhance presentation.  

Everything created in this class is for students to take home; all materials are included in the cost. As part of this course, a detailed recipe book is provided.
