Innovative tarts and tartelettes – Intermediate level

So much more than “just a tart”!

In this class you will learn how to create really refined and sophisticated tarts, using the latest innovations in patisserie. Build on your foundation skills and expand your repertoire and techniques. The outcomes from this class can be used in a commercial or private setting.

We cover an abundant selection of recipe components in this class that are all versatile and interchangeable, providing students with lots of new ideas to create their own combinations upon finishing this class.

You will learn how to make 3 different types of tarts from scratch during this fast-paced 8 hour class.

What you will learn:

  • Modern techniques of lining tarts using new equipment technology
  • Create interesting tart bases, incorporating hazelnut, lemon and sable Breton
  • Create 6 different contemporary fillings that are curd, mousse, cream, chantilly, cremeux and mousse based
  • How to glaze a tart with the use of a spray gun
  • How to create a “velvet” finish using a spray gun
  • A range of fashionable chocolate decorations that will finish off your tarts with finesse.

This is a hands-on class during which all students work on their own products.

Each student will make:

  • 1 x large hazelnut, coffee and praline tart
  • 1 x large raspberry, pistachio, vanilla tart
  • 3 x Pina colada tartelettes

If you have the relevant foundation skills needed then you are welcome to join us for any of our intermediate level courses.
