Learn how to make a range of fresh pastas including: 

  • Malloreddus (Gnocchi) 
  • Farfalle 
  • Tomato and Squid Ink Ravioli 
  • Scarpinocc 

Complete your pasta journey by complementing your own handmade pasta with delicious sauces and fillings. 

What you will learn

  • how to make a variety of pasta mixes; water base, egg base enriched with squid ink & tomato 
  • how to shape various pastas by hand 
  • how to roll, cut, fill and shape your ravioli 
  • demonstration on various traditional and contemporary pasta sauces 
  • demonstration in creating a spinach and ricotta filling 
  • how to cook your pasta ‘Al dente’ 
  • how to present a plated pasta dish with traditional and modern techniques 
  • understanding the use of garnishes to enhance your presentation 

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
