You will be introduced to fun and creative garnishing techniques that are perfect for industry, cake shops, catering or just for afternoon tea. 

What you will learn:

  • how to make a financier mix 
  • how to make a variety of fillings and inserts including mousses, curd and jellies 
  • how to make coconut caviar 
  • how to make and incorporate layers and texture whilst considering flavour combinations
  • demonstration on how to create a white velvet spray
  • modern and contemporary finishes
  • how to assemble and spray your financier 

Each student makes and takes home:

  • Pina Colada financier
  • Almond financier with caramelised pear and ginger

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of the course.
