Modern “Banoffee” Banana & Toffee entremet


Come and join us in this hands on and interactive class and learn how to convert a traditional “Banoffee pie” recipe into a beautiful modern and refined entremet version of this much loved classic.  

You will learn how to design a unique shaped mousse-based cake from the beginning, considering textures, layers and flavour combinations. We have designed this class in such a way that you will be able to replicate the cake both in a home or in a professional environment.

  • how to make a crunchy biscuit base that will remind you of a pie crust 
  • how to make a banana mousse that is full of flavour and smooth textured, suitable to be used in cakes 
  • how to make Dulce de Leche / thick creamy caramel layer
  • how to make a moist and decadent banana cake
  • how to caramelize bananas
  • how to make a shiny glaze 
  • how to glaze an unique shaped entremet like a professional 
  • how to make modern decorations to finish your entremet with style and finesse. 

You will leave this class with your own Banoffee - banana and toffee entremet in hand to share with family and friends. 

Entremet moulds are available to purchase at the academy for an additional cost of $29.95.
