Build and expand your knowledge of lamination and croissants to create unique and delicious coloured croissants that are sure to impress your family and friends 

In this intermediate level class, you will discover how to create colourful croissants, various types of fillings and be introduced to advanced garnishing and finishing techniques. 

What you will learn

  • dough preparation and dough colouring
  • when to introduce colour to dough
  • lamination technique by hand and with a dough sheeter
  • shaping techniques 
  • proofing and baking techniques
  • glazing and finishing techniques

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course. Students will also have the opportunity to take a second dough home in order to make their own croissants to enjoy with family and friends.

Introduction to croissants – level 1 or previous documented experience in dough lamination.
