Join us for this hands-on class and learn all there is to know about making perfect puff pastry. You will learn how to make puff pastry from scratch and achieve a perfect, flaky and light pastry dough. 

You will have the opportunity to convert your perfect puff pastry into delicious, classic pastries that will impress your family and friends. 

What you will learn

  • how to make puff pastry from scratch
    • mixing of ingredients & preparing the fillings
    • adding butter and the correct way to create turns  
    • folding and layering - lamination technique
  • how to make white Mornay sauce
  • how to make Spicy Moroccan Lamb filling (Halal*) 
  • make Spicy Moroccan Lamb filling pockets (Halal*)
  • make Prawn Asparagus Mornay Vol-au-Vents
  • make Portuguese Tarts by utilizing the scraps  

All students make all products from start to finish and of course get to take them home at the end of class. A detailed recipe book is provided as part of the course.

*Please Note: Halal meats used.
