Come and join us in this hands on and interactive class and learn how to create a sophisticated, well-balanced and incredible tasting modern entremet based on classic flavours. Our take on a much-loved classic brought into a new era of patisserie! 

You will learn how to design a mousse-based cake from the beginning, considering textures, layers and flavour combinations.

We have designed this class in such a way that you will be able to replicate the cake both in a home or professional environment. 

What you will learn: 

  • how to make a “Pain de Gene” with coffee punch / an almond based cake
  • how to make a hazelnut crumble
  • how to make a dulcey crunch
  • how to make an exceptional mascarpone mousse that is light in texture yet provides the right flavour balance 
  • how to make a sophisticated and well balanced coffee ganache 
  • how to make a perfectly shiny glaze
  • how to glaze and entremet professionally
  • how to make modern decorations to finish your entremet with style and finesse. 

You will leave this class with your own Tiramisu entremet in hand as well as a detailed recipe book so that you can recreate the cake again and again!
