Come and join us in this hands-on and interactive class and learn how to make a beautiful fruit based gateaux, learning foundation skills that will assist you in your journey of creating artful patisserie.
 
You will learn how to design a mousse based cake from the beginning, incorporating layers whilst considering textures and flavour combinations.

We have designed this class in such a way that you will be able to replicate the cake both at home or in a professional environment.  

What you will learn

  • how to make milk chocolate sponge for the base of your gateaux
  • how to make a toasted almond ganache to complement other flavours
  • how to make Tonka bean mousse suitable to be used in cakes or desserts
  • how to make a compote/jelly insert in your cake
  • how to make a crispy base to give a crunch to your product
  • how to glaze the entremet with sprayed white chocolate 
  • how to make the latest chocolate garnishes to complete your creation with finesse.

You will leave this class with your own cake in hand to share with family and friends as well as a detailed recipe book so that you can recreate the cake again and again!
