Learn the basic of choux pastry and how to create a selection of technically refined petit gateaux. 

You will be introduced to current industry garnishing techniques and have the opportunity to create versatile desserts, perfect for industry, cake shops, catering or any dessert occasion. 

These desserts can be created time and time again in a professional environment or easily in the comfort of your home that will truly set you apart and will leave your friends and family wanting more. 

What you will learn: 


Petit Gateaux

  • how to make different mousses and fillings 
  • how to make inserts, add layers and different textures to your petit gateaux 
  • how to make different types of sable and sponges 
  • how to make a variety of different glazes and learn how to glaze professionally 
  • how to make chocolate garnishes using advanced techniques
  • how to assemble, layer, glaze and garnish your petit gateaux 

Contemporary Éclair

  • how to make cream patisserie 
  • how to make a variety of modern fillings 
  • multiple piping techniques for decorations
  • contemporary and modern finishing techniques

Each student makes and takes home: 

  • Raspberry petit gateaux 
  • Yuzu petit gateaux 
  • Hazelnut milk chocolate petit gateaux 
  • Caramelised popcorn eclair 
  • Chocolate nutella eclair 
  • Lemon meringue eclair 
  • White chocolate, raspberry eclair 
  • Apple rhubarb crumble eclair  
  • Watermelon and lychee eclair 

Everything created in this class is for students to take home, all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
