Create a range of versatile desserts that are perfect for catering, high tea, cocktail functions and cake counters or simply to enjoy with family and friends over a cup of tea or coffee. 

In this course you will be introduced to: 

  • Opera Gateau: layers of light almond sponge cake, coffee buttercream and dark chocolate ganache 
  • Vanilla Crème brulee: The rich custard base flavoured with vanilla bean with a crisp burnt sugar crust 
  • Passionfruit Souffle: perfect light and fluffy dessert
  • Macarons with a delicious passionfruit and a coffee ganache 

What you will learn: 

Mastering the simple macaron

  • two different macaron methods, Italian and French style 
  • how to make passionfruit ganache  
  • how to make coffee ganache  
  • innovative techniques to create stylish and modern macarons 
  • piping techniques, single and dual colours 
  • how to assemble your macarons with finesse incorporating fresh seasonal fruit and edible flowers. 

French Classic Patisserie

  • how to make a traditional, smooth textured vanilla crème brûlée 
    • learn the importance of how to prepare the ingredients, considering the correct temperature & aeration 
    • learn how to cook the vanilla crème brûlée in a bain-maire to perfection, so that the dish is neither under or overcooked 
    • learn how to caramelize the top of the vanilla crème brûlée to achieve a crunchy finish 
  • how to make a passion fruit soufflé  
    • learn the importance of how to prepare the ingredients and equipment 
    • learn how to prepare ramekins so that soufflés rise evenly 
    • learn how to whisk the batter so that the soufflé is perfectly aerated 
    • learn how to combine your batters without losing the aeration 
    • learn how to bake your soufflé to perfection 
  • how to make classic Opera gâteau 
    • learn how to make an almond jaconde 
    • learn how to make a coffee butter cream 
    • learn how to make a chocolate ganache 
    • learn how to make a chocolate glaze 
    • learn how to glaze professionally and present your pastry items with finesse. 

Each student makes and takes home: 

  • Macarons

  • Passion fruit soufflé – students enjoy their soufflés in class. 

Everything created in this class is for students to take home, all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
