Come and join us in this hands on and interactive class and learn how to create one frozen entremet plus 4 petit gateaux, incorporating fresh flavours that will truly impress. 

You will learn how to design a unique shaped frozen entremet from the beginning, considering textures, layers and flavour combinations. We have designed this class in such a way that you will be able to replicate the cake both in a home or in a professional environment. 

What you will learn: 

  • how to make a crunchy meringue base 
  • how to make a bourbon vanilla ice-cream suitable for frozen desserts  
  • how to make a praline ice-cream
  • how to make raspberry and black current sorbet  
  • how to layer and assemble a frozen entremet and frozen petit gateaux 
  • how to create a “velvet” finish with the use of a spray gun 
  • how to make modern decorations to finish your entremet and petit gateux with style and finesse. 

You will leave this class with your own frozen entremet as well as 4 frozen petit gateaux. 

Students are advised to bring an esky or polyfoam box to this course in order to take home their products. Please feel free to bring your own containers that fit your esky size. 

  • The entremet will be placed onto an 210mm round cake board.
  • The 4 petit gateaux will be placed onto 4 x 75mm round cake boards.  
  • We provide students with two cake boxes that can accommodate everything made in class, if required.
  • Icepacks brought from home can be kept frozen for students throughout the day at the academy.
