Healthy and delicious high fibre breads


This hands on and interactive class is designed to teach students how to make four different high fibre breads using wholesome, natural  ingredients that contain a high concentration of nutrients, are nourishing and delicious. 

  • Pumpkin seed breads 
  • Ricotta and fennel seed breads  
  • Apple, currants and sultanas -fruited wheat germ breads
  • Muesli breads

Students will gain an appreciation and knowledge of healthy bread options that are easy to make & flavoursome, providing an alternative to everyday breads. 

This course is designed in a way that learning outcomes can be replicated both in a professional as well as a home environment. 

Students will not only walk away with a good understanding and hands on experience of how to make high fibre breads, but also feel inspired to try their own flavour combinations after attending this course. Your loved ones are sure to be impressed with the amazing breads created by you throughout this lesson!   

What you will learn: 

  • how to make four different bread dough’s from scratch 
  • understand important technical aspects of dough’s such as ingredients, mixing, hydration, proving dough, oven temperatures and baking
  • how to make, shape and bake:
    • pumpkin seed bread 
    • ricotta and fennel seed bread
    • apple, currants and sultanas fruited wheat germ bread 
    • muesli bread, loaded with a variety of dried fruits, oats, linseeds, poppy seeds, sesame seeds and a little honey 

All students work on their own recipes and are hands-on from start to finish. Each student makes generous dough volumes in all our bakery courses, providing the opportunity to practice outcomes more than once.

Each student will make and take home the following:

  • 4 x Pumpkin seed breads 
  • 8 x Ricotta and fennel seed breads  
  • 4 x Apple, currants and sultans -fruited wheat germ breads
  • 3 x Muesli breads

Everything created in class is for students to take home, all materials are included in the cost of the course. 

A detailed recipe booklet is provided as part of the course.
