Innovative tarts and tartelettes – foundation skills

Tarts level 1.3

Learn all there is to know about creating a perfect, melt in your mouth tart shell, which is the very foundation of your creations. We introduce you to a variety of filling options that will take your creative flair to a new level. 

The aim of this class is for you to learn how to create a range of innovative tarts and tartelettes perfect for catering, high tea, cocktail functions and cake counters or simply to enjoy with family and friends.

What you will learn

  • how to make pâte sucrée (sweet short crust pastry) 
  • how to make cocoa pâte sucrée (chocolate short crust pastry)
  • how to make a variety of fillings and textures:
    • chocolate ganache
    • creme patissiere
    • lemon curd
    • meringue
  • innovative techniques to create stylish and modern tarts and tartelettes
  • glazing and finishing techniques.

This is a hands-on class during which all students work on their own products.

Each student will make and take home:

  • 1 large chocolate tart
  • 1 large lemon meringue tart
  • Approximately 12 individual tartelettes  (chocolate, fruit & lemon). 

A detailed recipe book is provided as part of the course.
