Join us for this fun and creative class and learn how to design a mermaid theme vanilla drip cake with lots of layers and colours.


What you will learn:

  • how to make Italian meringue based buttercream for filling and masking cakes
  • how to make rice paper and chocolate (compound) sails
  • how to cut, fill, stack and level a 6 layer cake
  • how to decorate and finish the cake using edible gold leaf and sprinkle.
  • tips and tricks on how to colour buttercream evenly without overworking the buttercream
  • how to make meringue kisses
  • how to make fondant mermaid tails with gold embellishment
  • creative ways to decorate your cake to give it the final touch
  • how to make ganache to create the dripping technique

Macarons will be provided to use for decorations, they are not made in class.

All students are hands-on and work on their own cake.

You will leave this class with your very own Mermaid Drip Cake in hand as well as a detailed step-by-step manual.

All materials are included in the cost of the course.
