This is an entry level class structured to ensure that every student has sufficient time to work on shaping their products, getting a good handle on what is important to perform these skills.

Classes are hands-on and interactive, you can expect to practice a range of clearly demonstrated yeast dough's, shaping techniques and production methods to create a delicious Panettone & Brioche, while using fillings to garnishes their finish products.

This class has been designed in such a way that you will be able to replicate these products at home or in a professional environment.  

What you will learn

  • how to make and develop a sweet enriched dough
  • when to add fruits to a developed dough  
  • how to create a floral pattern from a filled sweet dough 
  • how to roll and shape savoury rolls
  • how to prepare fillings for the savoury rolls 
  • how to apply and understand the fermentation processes of a dough
  • types of glaze that can be applied to sweet and savoury doughs  

Everything created in class is for students to take home, all materials are included in the cost of the course.
