Advanced sugar showpiece workshop


Throughout this intensive course participants will delve into the intricacies of working with pastillage paste and isomalt to craft stunning elements such as mushrooms, flowers, a whimsical squirrel and an intricate acorn. 

Tailored specifically for professionals, this course delves into the advanced techniques required to craft a stunning showpiece. Learning from seasoned professional chefs you will gain wisdom while honing your skills. 

Immerse yourself in a transformative experience that will not only refine your skills but equip you with the knowledge and techniques needed to create and dazzle. 

Each student is provided with their own workstation and works on their own showpiece. Students take their showpiece with them at the end of the course. Please make your own arrangements for suitable packaging to transport your showpiece home safely.  

What you will Learn:

  • advanced casting, blowing and pulling techniques
  • craft intricate figurines and advanced glass effects sugar pieces 
  • create advanced sugar flowers and mushrooms 
  • master the skills of pulling straw sugar piece 
  • refine your skill in making pastillage paste and colour with an air compressor 
  • creating three-coloured ribbons
  • advanced showpiece assembly 
  • crafting components of the showpiece by using PVC sheets and pipes

Entry Requirements

Students are encouraged to have a substantial background in sugar handling within the industry or a demonstrated completion of intermediate sugar courses.
