Confectionery 101

Immerse yourself in the art of creating traditional confectionery. This is a very creative and interactive class that will take you a step closer to becoming an accomplished confectioner.  

What you will learn: 

  • how to bloom and prepare gelatine for marshmallow making
  • how to obtain maximum flavour to make liquorice
  • how to assemble and line the layers of the allsorts liquorice
  • how to prepare and caramelise the sugar correctly
  • how to emulsify ingredients to the caramel syrup
  • how to produce fruit pastes 

Each student makes and takes home:  

  • toasted vanilla marshmallow
  • traditional liquorice & liquorice allsorts
  • chewy salted caramel
  • sugar fruit lollies

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
