Step into the world of sophisticated pastry, whether you’re an aspiring pastry chef or simply a dessert enthusiast. This hands-on class will guide you through the art of creating exquisite tarts and tartelettes.

What you will learn

  • how to make pâte sucrée (sweet short crust pastry)
  • how to make cocoa pâte sucrée (chocolate short crust pastry)
  • how to make a variety of fillings and textures:
    • coffee chocolate ganache
    • coffee chantilly
    • passionfruit curd
    • meringue
    • passionfruit topping (demonstration)
    • raspberry cremeux (demonstration)
    • white chocolate cremeux (demonstration)
  • innovative techniques to create stylish and modern tarts and tartelettes glazing and finishing techniques.

Each student will make and take home:

  • 1 large Coffee and chocolate tart
  • 1 large Passionfruit meringue tart
  • Approximately 6 individual tartelettes (chocolate and coffee, raspberry & white chocolate and passionfruit).

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
