In this course you will delve into the world of basic chocolate production, mould preparation, and the artistry of hand-tempering. 

Beginning with essential chocolate theory, you’ll soon be creating your own chocolate delights.

  • the use of different types of couverture chocolate 
  • chocolate moulding, creating your own chocolate bars
  • preparing chocolate moulds
  • piping, filling and decorating techniques 
  • demonstration of ganache

  • understanding chocolate foundations
  • working with cocoa colour  

Everything created in class is for students to take home, all materials are included in the cost of the course.
