What you will learn:

  • how to make a modern stabilised sponge cake  
  • how to cut and sandwich a sponge cake 
  • how to roll a Swiss roll correctly 
  • how to calculate oven temperature and baking times based on each sponge 
  • how to prepare Chantilly cream 
  • introduction of basic piping nozzles and skills 
  • how to hold and use a piping bag correctly 
  • how to make a cherry infused syrup 
  • demonstration of basic chocolate garnishes  
  • simple and elegant finishing designs 

All our students are hands-on and work on their own cakes. A detailed step-by-step manual is provided.
