Come and join us in this hands-on and interactive class and learn how to make a beautiful fruit based entremet, learning foundation skills that will assist you in your journey of creating artful patisserie. 

You will learn how to design a mousse based cake from the beginning, incorporating layers whilst considering textures and flavour combinations. 
We have designed this class in such a way that you will be able to replicate the cake both at home or in a professional environment. 

What you will learn

  • how to make “Biscuit au Citron de Menton” / a lemon cake for the base of your entremet
  • how to make strawberry mousse suitable to be used in cakes  
  • how to make a cold set vanilla crème brulee used as an insert in your cake 
  • how to make an almond crumble to add some texture
  • learn how to incorporate a variety of textures like crunchy, smooth, chewy to enhance the eating experience 
  • learn how to make a perfectly shiny glaze
  • learn how to glaze an entremet like a professional
  • learn how to make chocolate garnishes to complete your creation with finesse. 

You will leave this class with your own cake in hand to share with family and friends.
