Build and refine your existing skills and create a selection of contemporary and technically refined petit gateaux.

You will be introduced to garnishing techniques and have the opportunity to create versatile desserts, perfect for industry, cake shops, catering or any dessert occasion. These stylish and visually stunning desserts will truly set you apart! Students are introduced to a vast variety of skills and techniques and different recipe components.

This class is an excellent opportunity for students to build and refine their existing skills.  

What you will learn

  • how to make different mousses and fillings
  • how to make inserts, add layers and different textures to your petit gateaux
  • how to make different types of sable and sponges
  • how to make a variety of different glazes and learn how to glaze professionally
  • how to make chocolate garnishes using advanced techniques
  • how to assemble, layer, glaze and garnish your petit gateaux

Each student makes and takes home:

  • 3x  Raspberry  petit gateaux
  • 3x “Calamansi” petit gateaux
  • 3x  “Hazelnut Milk Chocolate” petit gateaux

Everything created in this class is for students to take home; all materials are included in the cost of the course. A detailed recipe book is provided as part of this course.
